Whether for the holidays or not these red velvet cupcakes are a treat, moist, fun and delicious not only for your eyes or heart to beat.
Cupcakes shouldn’t be boring, TOO sweet or TOO overpowering. They should be a mystery, an creation of invention, a meaningful representation, and have many thoughts of curiosity. With these cupcakes you will take a bite and immediately have thought bubbles popping out with question marks as to ‘WHAT IS THAT TASTE?!’
When you have tastes to question and thought bubbles popping, those thoughts create taste bud blasting compliments that are coming and never stopping.
RED VELVET CUPCAKES

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers. You will have extra so If you want you can make a mini cake as well :) In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, milk & lemon(buttermilk), eggs, food coloring, and vanilla with an electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined. Divide the batter evenly among the cupcake tins about 2/3 filled, and tap pan to get the air bubbles out. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. USE THE MIDDLE OF THE OVEN FOR BEST EVEN PUFFINESS!(the batch behind the front one is lopsided and those were placed at the top) Test the cupcakes with a toothpick to make sure it comes out clean or lightly shaded red. Remove from oven and cool completely before frosting. FROSTING :0 In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Add the lemon and increase the speed to high and mix until very light and fluffy. Place the frosting into a piping bag and decorate according to day, occasion or mood. THANK YOU PAULA DEEN for not failing me once again! (I changed some things about the recipe but if you would like to follow the original you can follow the link above) I have distinct memories on a red velvet cake because I always wondered why it is red and what is that taste? That taste is the cocoa powder, not too over powering and very subtle and that I believe is why it is so delicate like velvet. I trust Paula Deen with her recipes not only because she is absolutely beautiful, friendly, and sweet but because she is from the South. My granny is from the South and although she seems a bit overpowering sometimes there is NOTHING overpowering about Southern baking. They’re different from all the rest, they really make the best. Thinking Bubbles: These cupcakes represent your daily life, huh? a cupcake representing my life? YES. These cupcakes have a very strong and addicting frosting while the actual cupcake isn’t too sweet nor too bland, it has mystery and a smooth velvety froth to it. Living shouldn’t be too much or too little of anything. If one trait you have is TOO overpowering and something else is TOO subtle then you are well rounded my friend. Nobody wants perfection, nobody is attracted to perfection-but then why do we like it? Well simply because we are curious as to why it is perfect or why it SEEMS that way and the more we inspect, we find things aren’t what they seem. We look at these beautiful vibrate cupcakes and think WOW THEY LOOK PERFECT, I mean ya they taste amazing(hehe) but they are not perfect. There is many ways I could have altered these to make them perfect but why, they were outstanding just the way I did it. Don’t push something to far… relax, realize that nothing may go the way you want it to go but why waste your time repeating that in your head, why not think ‘Hmm I think I’ll try that next time!’
